Where You Can Get Those Super Bouncy Castella Cakes

In the world of food fads, it’s high time we get jiggly with this latest one — especially when we’re talking about these particularly fluffy sponge cakes. Yeah, you’d think sponge cakes aren’t the most exciting things to talk about right, but you’ll be surprised; after all, it’s the castella here, the ones that look like this:


Oh!! Uh huh. Skip to 0:26 if you just want to watch the wobbly motion. As for why they’re popular, there’s definitely that element of drama there. At most stores, the cake comes out from the oven freshly baked, and is then placed on the counter to be served — and admired. There’s the anticipation of removing the baking paper, then tossing the tray high up in order to flip the humungous block over. With a long ruler (yeah, drama), that’s then sliced open to reveal its soft centre, but not without a mesmerising wiggle or two.
These castella cakes are definitely the source of that snaking queue at your neighbourhood mall, or a nasty comment by an outraged customer on Facebook, either way, it’s obvious that actually getting your hands on this piece of sponge cake is no piece of cake, thanks to its popularity over the recent months.
While the original recipe was devised in Spain, it was the Japanese who made it all the rage, using just eggs, bread flour, sugar and honey for their far more bouncy renditions. As for the ones in Singapore now, it seems we’re being introduced to the Taiwanese versions of the castalla cakes, usually served hot, and with the addition of well-loved cheese. ’nuff said, we’ll cut to the fad.

Straight from Taiwan, they’re the ones credited for starting the craze in Singapore — we heard there was a 4 hour queue back in May! To be honest, we only discovered Le Castella one fine day while walking around the basement of Tampines 1, and wondering why people were huddling about the nondescript store front with just wooden panels at the back, a prominent Chinese character for a name, stacks of brown boxes and one black counter top. Strange huh, so we stuck around. And then we saw it, those wobbly cakes being carried out to the kitchen, awaiting to be sliced, making the whole “cutting ceremony” a sales pitch right there.


Each generous slab of the original cake ($9.90) is moist and light, kinda like the Steamed Egg Cake that we’re used to at dim sum restaurants. As for the Cheese Castella ($11.90) it contains two layers of oozy cheese within, which adds a nice savoury twist to the otherwise sweet eggy flavour of the cake. At the moment, you might have to wait two hours for your cake, though the store has since implemented time slots for you to pick up your item.

Originally from Malaysia, the brand quickly expanded across its home country due to the rising popularity of its castella cakes, which led to an explosion of 14 outlets across the country — of course, this just means that they need to come over to our shores too, so Singaporeans can get a taste of the cakes for ourselves. The cakes from Ah Mah Homemade Cake are freshly made daily and inspired by the popular egg sponge varieties from Taiwan, hence the baking time of 80 minutes and a recipe of purely milk, eggs and quality flour without added water, preservatives or colouring. That also means that they’re pretty healthy, so you won’t feel too sinful the next time you’re munching on this snack.

You can choose from the Original ($8) or Cheese ($11) flavours — to date, over 18,000 of the delicious moist cakes have been sold in Singapore alone. Since arriving here, they’ve had outlets at Bukit Panjang Plaza, VivoCity, and a recent third outlet at JCube, while they’re also looking to conquer the East with one at Paya Lebar Square (24 August), as well as Plaza Singapura and Bedok in September.

Consider this the more elegant version of the castella cake — after all, they’re called The Queen’s Castella Cakes, conceived by Chef Pang Kok Keong of Antoinette, and come in six exquisite flavours. We have the now-classic Vanilla ($8) and Vanilla Cheese ($11, with a cheddar and parmesan cheese glaze), but also Earl Grey ($12), Earl Grey Cheese ($15), Nutella ($13) and the local twist of Ondeh Ondeh ($11), or pandan-infused cake studded with gula melaka bits and hints of coconut. We’re certainly glad to see some originality here.

While the Taiwanese-inspired versions of castella cakes tend to be more pillowy, those from Parisian-style bakery Antoinette are of a denser texture, though still as fluffy — this requires a method that does without baking powder, and instead having the cakes lift purely by meringue and a slow-bake method for that light, melt-in-your-mouth feel.

You know something’s a trend when BreadTalk has their own version of it, but hey, it looks like they’re doing a good job of replicating the soft texture of the sponge cake, judging from their social media postings. Of course, they’ve changed up the name as well, to a cute-sounding Pong Pong Cake ($8.80), and mixed it up with another Singaporean food craze: salted egg yolk. Hence, yes, the queues. The salted egg yolk filling sits between the layers of sponge that’s touted to be like the old-school versions, and though we heard that sponge isn’t as airy as their competitors, but you know, who in their right minds can resist anything salted egg yolk?! Certainly not us.

See A Little Bit Of Singapore In Tokyo This Weekend

A bit of our little red dot is going to be transplanted into the city of Tokyo this weekend, in the form of this year’s edition of the Singapore: Inside Out exhibition, organised by the Singapore Tourism Board.
Previous editions of this travelling exhibition have been held in Beijing, London and New York since 2015, and this year the chosen destinations are Tokyo and in November, Sydney. The whole idea of Singapore: Inside Out is to bring the Singapore creative identity to the rest of the world, in the form of showcases that are also carefully curated with the host city’s audience in mind.
We’re especially excited about this month’s Tokyo edition because it stars one of our own: Josiah Chua, NYLON Singapore‘s Contributing Senior Fashion Stylist, will be exhibiting his fashion creations!

Jo’s had strong ties to the land of the rising sun for some time now: besides having studied and worked there, his fashion designs often bear strong fantasy themes, with obvious anime influences. His eponymous label is stocked in Tokyo, and a one-of-a-kind creation was ever picked up by the Mother Monster herself, Lady Gaga.
For Singapore: Inside Out, he’ll be presenting a first look into his 2018 capsule collection, titled “光”, which is “light” in Chinese. The collection comes inspired by Sailor Moon, also Jo’s favourite anime series, and this manifests in the form of holographic materials, plenty of iridescence, and strong, graphic shapes on floaty dresses.

Think the magical sequence when the regular schoolgirls transform into their magical soldier alter-egos, with the bursts of iridescent light that never failed to capture our imaginations as children glued to the TV screens every weekend morning. For this exhibition, Josiah will be working with Media Art Nexus, an art collective based in the Nanyang Technological University, to create an interactive projection of dazzling stars and light that moves with the viewer, all to evoke that specific magic of Sailor Moon’s transformation.
 

 
Other creatives that will be part of Singapore: Inside Out in Tokyo include sound artist Zul Mahmod, local gallery shop Supermama, KITCHEN. LABEL, a Singapore and Tokyo-based record label. There will also be partner events running in tandem with the exhibition, such as a collaboration between Tokyo’s Dominique Ansel bakery and Singaporean chef Malcolm Lee of Candlenut, to create a Peranakan-inspired dessert stocked at Dominique Ansel’s Omotesando bakery.

Before you start breaking out into the whole “his palms are sweaty, knees weak, arms are heavy” jam, just combine Eminem’s words with the image of 20 camera-equipped individuals competing for the title of Asia’s ultimate amateur photographer. The description fits, yeah?


Well, at least that’s what’s going to go down when season 4 of Photo Face-Off premieres on 24 August on the HISTORY Channel.

Presented by Canon Photo Marathon and hosted by Kelly Latimer, Asia’s number one photography showdown will once again feature pro photographer Justin Mott, with 5 exciting, action-packed one-hour episodes spread out across 5 countries.
Four local contestants from each country – namely, Singapore, Malaysia, Vietnam, Indonesia, and the Philippines – will compete against one another for a chance to land the solitary spot at the competition’s Grand Finale episode in Chiang Rai, Thailand.
It ain’t going to be easy getting there though.
Besides the pressure of Justin Mott popping up with his pro skills, each challenge will push all the contestants to their limits, with qualities such as technical skill, knowledge, and creativity put under the spotlight.

For instance, in the first episode based in Singapore, contestants must showcase their very best sharpshooter skills as they attempt to snap rock climbers in action, all the while climbing the walls themselves.
The next episode in Melaka, Malaysia, sees each contestant ferrying around a bowl of freshly made cendol to find a backdrop for an insta-worthy foodie shot. The problem is that the sun will be freaking hot, and once the ice melts, time is up.
Seriously, talk about difficult.

These are just some of the crazy challenges that contestants will have to face before becoming Asia’s ultimate amateur photographer.
Before that though, a winner from a wild card round featuring hopefuls from Thailand, Hong Kong, and Taiwan will join the five country champions in Chiang Rai for a showdown of epic proportions, something you really don’t want to miss, especially if you love looking at beautiful pictures.
So who will become champion? Will our local reps make Singapore proud again like how university student Shaun Tan did back in 2015? Or could another country steal the limelight? We guess the only way to find out is to tune in when Photo Face-Off premieres later this 24 August at 9pm on the HISTORY Channel (StarHub TV Ch 401).

Apple May Sell Wireless Charger Separately for iPhone 8

It seems as if a day won’t pass without an Apple rumour popping up. This time, reports have predicted that the iPhone 8’s wireless charging station could be sold as a separate accessory, according to leaked images on Chinese social media platform Weibo.
Apple expert John Gruber appears to confirm this theory, explaining in a tweet that in addition to the charger being sold separately, it may require a software update to iOS 11.1 for it to become operational; like what went down with the iPhone 7’s portrait mode last year.



That said; wireless charging is still not a confirmed feature for the iPhone 8.
Although Robert Hwang, chief executive of Apple supply chain company Wistron, mentioned earlier this year that “new features like waterproof and wireless charging now require some different testing, and waterproof function will alter the assembly process a bit.”
This statement suggests that the iPhone 8 will have wireless charging. Coupled with the leaked images from Weibo, it’s safe to assume that Apple will be incorporating the technology into its latest flagship gadget.

Nevertheless, question marks still remain.
There’s no way to verify the authenticity of the Weibo images, while it’s unclear whether Apple will be introducing inductive charging technology or Wi-fi based charging, if wireless charging is indeed introduced in the first place.
Whatever the case may be; the iPhone 8 is projected to be the most radically different iPhone to date, with brand new features like an all-glass display, facial recognition, and the removal of the TouchID.
However, it’s important to take these rumours with a pinch of salt, as they are just rumours at the end of the day, and the only way to find out if they’re true is to wait for the phone’s release; which could happen as early as this September.

Copper Rose Is The New Rose Gold

Guessing what’s the new colour that is currently in trend right now has never been so easy. Just look at the iPhone colour scheme and you’ll know. Nah, we’re not talking about black and silver; those colours are classics that won’t go away. We’re talking about the new copper rose colourway that is rumoured to replace the rose gold iteration of the iPhone. Need more proof that copper rose is the new in-colour? As you can see, the intensity of the copper rose hue varies from a coral pinkish hue to a deep dark orangey-brown, depending on your personal preference. Add in more pink tones if you prefer the rose gold to stand out, or spam on the orange and reds if you’d like deep set-looking eyes. The copper rose gold colour can be found in most warm eyeshadow palettes or you can simply blend the following three colours to achieve the copper rose effect: burnt orange, brown and red. The burnt orange sets the temperature and base for the lids, while the brown mixed with a tinge of red gives the outer corners a reddish rust hue. For this look, opting for glittery eyeshadows produces the best results.
Complete the look by contouring the face with bronzer and round it off with a Kim K-approved nude lipstick for that tan, sun-kissed glow.

The Hender Scheme x adidas Originals Collection Shows How Nude Is Done

Say whatever you will, but the adidas Originals line of shoes are hands down one of the most fashionable and trendiest shoes to sport currently. Just look at the classic pair of Stan Smiths which recently went through another iteration, along with Pharrell William’s matching Tennis Hu silhouette. And the ever-popular NMDs? Known for it’s minimalistic and vachetta tan leather aesthetics, Hender Scheme is reinterpreting three models from the adidas Originals archives – the NMD_R1, the Superstar, and the MicroPacer. Hand-made in Tokyo using undyed leather and replaceable soles, the artisanal shoes were Hender Scheme’s founder, Ryo Kashiwazaki’s exploration of the relationship between performance and lifestyle footwear.

While Hender Scheme has previously released it’s own versions of the Superstar and the Micropacer before, this collection is an official collaboration between the two brands, and features the official adidas branding on the shoes. However, the unique aspect of the kicks are that some of the key characteristics of the respective sneakers are being excluded – the pedometer is being stripped off from the MicroPacer, while the NMD has its signature BOOST midsole removed. Nonetheless, the attention to detail is superb, and with great quality and design comes an equally jaw-dropping price tag and in limited quantities at that. The Superstar will cost you US$900, while the MicroPacer retails at US$950, with the NMD being the most expensive, at US$1,000. We guess we will just have to eat grass for the rest of the month.

This Calming Blue Ingredient Is Like a Lullaby for the Skin

For the longest time, the chamomile flower has been known to bring peace to the mind and body. Little did we know, you can extract a vibrant blue-tinged essential oil from Moroccan blue chamomile through a steam distillation and use that topically as a treatment. Blue tansy bears a sweet, herbaceous aroma, and is said to impart a similar calming effect on the skin, which is great news for innovators in the beauty industry looking to crown the next It-ingredient.
What’s all the fuss about?

It doesn’t just work brilliantly on visible redness and rashes, it’ll do wonders on acne-prone skin too, which is why more brands have started to incorporate this baby blue into their skincare formulas. They may not come cheap, but they’re known saviours for those who’ve struggled with their skin, so it might just be worth the investment.

NYLON Team Picks: The One Beauty Brand We'd Live With Forever

Since I became part of the beauty industry, this question has been posed to me a few times already: if you could only live with one beauty brand for the rest of your life, which one would it be?
For any beauty junkie, it’s a nightmare scenario – how can you pick just ONE brand??!? Still, it’s an interesting question to ponder, so we put ourselves to the challenge: which brand would we pick?

If I ever had to be in the very unfortunate circumstance of having one beauty brand in my life, I’d like François Nars to be my main man. I’ve already given this quite a bit of thought, and my choice has always been clear: NARS is a brand with an identity that resonates the most with me, with the minimalist packaging that holds a full spectrum of colours that range from subtle nudes to statement darks, so I know I’ll always be able to find a shade I want.
Another thing that’s very important to me is base makeup. NARS’ Radiant Creamy Concealer needs no introduction, and I can see myself relying on it for the rest of my days; for coverage, I could rotate between the Velvet Matte Skin Tint and the All Day Luminous Weightless Foundation. When Tami asked me which ONE beauty brand I would choose if I had to live with just that for the rest of my life… I felt very stressed. I love and use so many brands right now that it’s difficult to choose just one; and in my profession as an editor, I shouldn’t be playing favourites and should proclaim my love for ALL brands for the sake of advertising sales. But alas, this is editorial and I have to speak from the heart. It would be shu uemura (no surprises here!). I know, it’s kinda pretentious to be picking a millennial beauty brand that’s not even available in Singapore, especially when my favourite beauty products come from a wide range of brands that are actually available here  — but hey, that’s the problem, I simply couldn’t decide. Here’s my thought process: to be smart, should I go for brands with a wide array of items to choose from (eyeliner! base makeup! lipsticks! also skincare!) or should I start by picking my must-haves, or my favourites… and eventually, if there was a zombie apocalypse, what’s the one box of beauty items I’d slash through a horde for on my next raid? Because #priorities, duh. So I went with my gut (still intact thanks), and picked Glossier.
The brand speaks to me because, 1) hello packaging, and 2) it’s minimal and fuss-free and prides itself on real, natural beauty. Something about their philosophy feels very authentic to me. Since working at NYLON, I honestly don’t think I can live a day without makeup, and yet I like to take shortcuts in my routine — annoying, yes — so I’m always on the lookout for products that do a lot with very little. Take for instance the Priming Moisturizer, one of the first products I tried. It’s a real multi-tasker that both plumps my skin, leaving it smooth and hydrated and silky, contains an anti-redness complex that soothes and evens my skin tone in the mornings, and leaves a dewy finish that doesn’t feel too oily.
Base makeup’s important to me, as you can tell from my selection of products, and I always want to live my day with (the illusion of) good skin — this is achieved by the Perfecting Skin Tint, that seriously looks like My Skin But Better on my face with its lightweight formula. Then, I swipe on the Haloscope for a dewy sheen on the top of my cheeks for a natural-looking glow; helps that the product’s a skincare hybrid too.
As for the Cloud Paint, it’s set to be my next purchase! I’ve been yearning for it since I saw their models’ flushed cheeks on Instagram, and gotta say, anything that I can apply without precision in the mornings/in the car is always a winner. Of course, the brand has a range of skincare items, including serums and masks too, in case my skin needs that boost in this imaginary brand-starved beauty landscape. One thing I’d sorely miss though — eyeliners, and all those high-intensity lipsticks that I love playing around with!

This week’s team beauty picks was a tough one for me, not because I had many beauty brands in mind, but rather, I haven’t found one that I really would swear by. But going by my previous team picks edition, my colleagues immediately pointed out that I’ve been using a couple of products from Korean brands, which is why I have decided to settle for Etude House (at least for now).
When I went to Korea last year, I bought a bunch of products from this brand, and they all didn’t had anything negative I could point out. If there is one product you have to try from the brand, I would highly recommend their AC Clean Up Pink Powder Spot, which works so effectively. I do break out quite a bit, and this product dries out the pimple and reduces redness the very next day. I’ve mentioned it before in a previous team pick edition, so you can check out my review of it there.
Their Play 101 Blending Pencils are also one of my favourites because the range is just so versatile and multi-functional. They can be used as an eyeshadow shade, for contouring and highlighting, or even as a lipstick or a blusher. Not only does it save you money, it also makes for a lighter makeup pouch. Their All-Day Fix line of eye makeup are also part of my everyday make-up routine. The eyeliners and mascaras stay all day without smudging, and are waterproof as well, so I rarely have to touch up on my eyes throughout the day. I especially like how the eyeliner is super smooth to glide on and is very precise as well, so I can usually perfect my eyeliner in just a few strokes of the pen.

Brand pick: Paula’s Choice

My sensitive, blemish-prone skin reacts negatively to about 89% of beauty products on the market (statistics you can trust), but there are 6 products from Paula’s Choice that have shoved every other product out of the way and nestled themselves into my permanent skincare routine. They keep my raging acne under control, they don’t ever annoy my delicate skin, and they’ve taught me to focus on formula instead of hype, which is a feat when you’re working in this industry.
I’m pretty much the designated guinea pig in this office when products arrive claiming to be formulated for sensitive skin, so you’ll often find me squinting at ingredient lists and cautiously monitoring patch tests on my limbs. So far, none of the items I’ve tried (oh, there’s been plenty) have replaced my cleanser, toner, exfoliant, spot treatment, and sunscreen from Paula’s Choice. I think that speaks for itself.
If you’re new to the brand, I’d recommend starting with their bestseller, the Skin Perfecting 2% BHA Liquid, which is an essential I’ve raved about in the past. At the moment, I’m still in love with their body exfoliant – I’ve waxed poetic about it here. The brand also carries a nice range of sunscreens that cater to every skin type and address all sorts of skin concerns, so do give them a browse if you have trouble finding good SPF.

Nokia Launches First Ever High-End Smartphone

Just last month, we gave a sneak peek of Nokia’s brand new high-end smartphone, the Nokia 8. And now, the highly anticipated gadget has finally come to fruition after Finnish tech brand HMD Global announced its launch via a press release on Thursday (August 17).


In case you’re wondering; it’s every bit as premium as Nokia claims it to be. Well, at least in terms of specs.
There’s a sizeable 5.3-inch QHD display, a top-tier Snapdragon 835 processor, as well as the latest Android 7.1 Nougat operating system. In other words, it’s definitely a powerful flagship phone, and a good alternative to the competition.


But what separates it from the rest of the pack? To answer that question, one only needs to look at what is called Dual-Sight video, a new feature in the Nokia 8 that allows users to live-stream clips in real-time to social media channels like Facebook and YouTube. The phone does this by utilising both its front and rear cameras.

Another new function of the Nokia 8 is OZO Audio, which Nokia claims is “exclusive Hollywood technology”. Basically, this function gives you total 360° audio control, so you can hear your music clearly from any angle, cinema-style.
As for its design, the Nokia 8 is crafted from a slick, high-gloss copper block of aluminum, lending it a very classy look and feel; a far cry from the hideous “Copper Gold” iPhone that was revealed in a recent Apple leak.

There’s no word yet on a Singapore release, but HMD’s head of product marketing for Asia-Pacific Henri Mattila told the Straits Times that the Nokia 8 will “definitely come to Southeast Asia”, so fingers crossed.
That said; is all this enough to propel Nokia back to the spotlight of the mobile phone scene? Well, only time will tell. There’s only one thing for certain though: all we need is for them to bring Snake back, and we’re good, Nokia 8 or not.

Gotta Grow Em’ All with These Pokéball Terrariums

Nope, the perennial question of humanity’s existence isn’t “are there aliens?” or “where do we come from?” It’s “what’s inside a pokéball?”
Thankfully, all you poké fans will now be able to find out courtesy of these super adorable terrariums from Rement Inc. – a Japanese toy and goods maker.
Each miniature globe features Gen 1 favourites from the Pokémon series, such as Pikachu standing happily on a tree log, and Snorlax sleeping peacefully on a bridge; definitely a subtle reference to all the times he’s blocked a passageway in Nintendo’s Gameboy version.

Still not convinced that these terrariums are how Pokémon live inside their pokéballs? Well, Junichi Masuda, producer of Pokémon Sun and Moon, told Kotaku:
“I think it’s safe to say that it’s very comfortable inside a Pokéball, it’s a very comfortable environment. Maybe the equivalent of a high-end suite room in a fancy hotel.”

KFC Re-Launches Double Down After Trolling Singapore with Steamed Chicken Burger

Don’t believe everything you see on the Internet. Well, at least take KFC’s social media posts with a pinch of salt.
The fast food giant in the last few days trolled its fans big time; first by uploading an image of a burger silhouette that resembled a Double Down, then by revealing it to be a Double Steamed Chicken burger stuffed with sauerkraut, coleslaw, and pickled cucumbers.


Needless to say, people were triggered.

After all, it’s supposed to be Kentucky FRIED Chicken, right? Not Kentucky Steamed Chicken.
Thankfully, we’ve been spared the atrocity of eating that horror show, as the KFC Double Down was released instead to the collective sigh of relief from all fast food junkies.

As part of KFC’s #SorryNotSorry campaign, the Double Down will come in two varieties: the original burger with two slices of fried chicken, turkey bacon, and a slice of cheddar cheese, and the Hawaiian Double Down; which comes loaded with same ingredients with the addition of a pineapple slice and BBQ sauce.

After trying it, we couldn’t help but feel that the Double Down was just another golden ticket to the promised land of heart attacks and high cholesterol.
If anything, the Double Down was nowhere near as outrageous as the insane Chizza creation launched earlier this year, simply because it has been done before. But after this episode, we’re not putting anything past KFC.
Who knows? That Double Steamed Chicken Burger might become a reality one day too.

This Major Natural Brand Is Launching a Full Line of Cosmetics

In the makeup industry, beauty brands have to act fast to stay relevant and push their way to the forefront, but there are also brands that enjoy taking their time to create products and are totally chill about new launches. Case in point? Burt’s Bees. Sure, they’ve got coloured lip products and BB creams in their collection, but for a brand that’s been around for over 30 years, they’re a little late to the cosmetics game. Better late than never, though. At long last, the natural beauty brand is launching a full range of makeup.

It’s not easy to formulate quality products with natural ingredients, which is why Burt’s Bees brought in celebrity makeup artist Toby Fleischman to help create the collection. Joining their neat portfolio of lip products is a glossy lipstick, which makes a nice switch for the balmy textures we’re so used to seeing from the brand.

Along with new liquid and powder foundations, the lineup will also include blush, mascara, liner, three-shade eyeshadow palettes, and brow pencil. It’s also good to know that their mascara uses jojoba oil and glycerin instead of harsh chemicals, so it’s been ophthalmologist-tested and approved, giving contact lens wearers and those with sensitive eyes something to rejoice about.

As expected, all of these products are free of parabens, phthalates, synthetic fragrances, and petrolatum, so you might wanna consider trading in some of your non-natural beauty products for these instead. The seven-piece collection is slated to hit US stores in September, so we’ll probably have to wait a little longer till they arrive at local Sephora.
